I'm in the summer squash boat now... not the zucchini overload, but these little alien pattypan things.
The zucchini needed a little more sun, I think. But these monsters are doing just fine.
So the first option is always Z bread. This one had chocolate chunks so it was a gift, that's a bit much for us here.
The next option is Ina Garten's recipe for zucchini "pancakes" (I don't know why they aren't fritters). So the question is, what next? I can always toss them on the grill or saute them up and dump them in pasta.

My uncle said, when I told him I was growing zucchini one year, "Oh, those are the things you leave on the neighbor's doorstep and midnight, then run!" Right.
Bbq!!! It's my favourite veggie to just slice , brush some oil on and but on the bbq. They become soft and oh so flavoursome - yum!
They *are* good in salads, stirfries, etc. I've also added them to veggie chili. And soup. Definitely try the fritters/pancakes. They're easy and delish.
They have been tossed on the barbecue successfully, the flavor is lovely. The fritters were my favorite, though, I tossed together some roasted red pepper dip and that was a nice combo. But the questions is, how can we make the fritters crispier and less pancake-y? Cupcakes just may be next on the list, if they don't end up in a batch of vegetable soup first (with the first of the green beans!).
